In an age when technological innovation often conjures images of sleek devices and artificial intelligence, one professor found inspiration in something far more humble—a dry, fallen coconut leaf. Dr. Saji Varghese, Associate Professor of English at Christ University, Bangalore, has redefined what it means to be an innovator. His pioneering work in sustainable design is not only helping heal the planet but is also empowering rural communities across India. What began for him as a casual stroll around the university’s campus turned into a global movement against plastic pollution, proving that true innovation often lies in the ordinary.
From Campus Walk to Spark of Innovation
Dr. Saji Varghese is not your typical academic. While he teaches English literature at Christ University, he also wears the hats of an inventor, social entrepreneur, and environmental changemaker. As Coordinator of the Centre for Design and Innovations for Social Entrepreneurship (DAISE) under the Christ Incubation Centre, he has fused education with innovation to address pressing ecological and social issues. Ever since venturing into grassroots innovation, he has invented various products. One among his many inventions is a simple yet revolutionary product: drinking straws made from naturally fallen coconut leaves.
The journey of this innovative product dates back to October 2017, when, while walking through the campus of Christ University, Dr. Saji noticed a pile of fallen coconut leaves. Just a day earlier, he had spoken with a visitor about the environmental harm caused by single-use plastic straws—how they choke ecosystems and endanger marine life.
As he stood there observing the dry leaves, a thought struck him: "Could these leaves be turned into straws?"
Creating the World’s First Straw Made from Coconut Leaves
Dr. Saji and his team soon discovered that fallen coconut leaves contain a natural wax rich in phenolic compounds, making them an ideal, non-toxic material for producing straws.
After extensive research and development, he successfully created the world’s first drinking straw made from naturally fallen coconut leaves. The product received India’s fastest-ever patent approval for a product of its kind.
The straws are not only biodegradable but also hydrophobic, antifungal, and capable of holding their shape in beverages for over four hours, far outperforming typical paper alternatives.
The Birth and Rise of Sunbird Straws
To bring this eco-friendly solution to the market, Dr. Saji founded Sunbird Straws in 2020. His students—Chirag, Sandeep, and Anna—turned down lucrative international job offers to join him. Chirag, a space engineering graduate, now serves as the CEO of the company, while others lead production and operations. Together, they engineered proprietary machinery that reduced the production time of these eco-friendly straws from 45 seconds to just 3 seconds per straw.
Operating as a social enterprise, Sunbird Straws now employs over 115 rural women across Kerala, Karnataka, and Tamil Nadu. These women produce the straws using in-house technology, transforming what was once agricultural waste into a product now used by prestigious clients like Taj Hotels and the Four Seasons. The company also exports its straws to more than 10 countries.
Recognition Received
Sunbird Straws has earned both national and international acclaim. It has been showcased in the material library of the University of Pennsylvania, recognised by the United Nations, and even featured at high-profile events such as a luxury wedding in Italy.
Dr. Saji’s dedicated efforts in researching, developing, and successfully manufacturing eco-friendly straws from dried coconut leaves — and marketing them as a viable commercial product — have earned him numerous accolades, including the Honey Bee Network Creativity and Inclusivity Award, then Swiss Re Shine Entrepreneur title, the EarthOn Foundation Eco Champion award and the MassChallenge Switzerland Award.
Dr. Saji was also invited to be part of the Indian President’s business delegation to the Philippines, highlighting the global relevance of his grassroots innovation.
Empowering Communities, Protecting the Planet
At its heart, Sunbird Straws is a story of environmental stewardship and social empowerment. Through its eco-friendly product offering, it has diverted over two million coconut leaves from being burnt, significantly reducing CO₂ emissions. Meanwhile, more than 107 women have achieved economic independence through their work at the company's rural production centres.

In a world chasing the next big thing, he found purpose in fallen leaves and built a movement that’s changing lives—and the planet—one straw at a time.
